Carol’s Cookies Handmade Mini Cookies

Carol’s Cookies is known for our one-of-a-kind, handmade, nearly half-pound cookies.  From the first batch of cookies that sold out in under 24-hours at a local grocery store in Highland Park, Illinois in 1979 to today – her recipe hasn’t changed.

As Carol’s Cookies grew notoriety, Carol consistently received requests from fans asking for her to expand the flavors of her cookies.  Her original Chocolate Chip Cookies and Oatmeal Raisin Cookies are still adored and some of her best-sellers, but Carol was able to develop new recipes to suit all tastes from Toffee Chocolate Crunch to Peanut Butter Double Chocolate Cookies.

But in 2004, the trend for smaller portion cookie sizes were starting to surface.  After 25 years in business, Carol was fielding many requests for a smaller cookie.  While Carol’s is synonymous with giant cookies, she recognized that there was a shift in eating preferences and it was time to create a new line of handmade cookies – The Minis.

A kid-sized snack, a sweet treat on a road-trip, or just wanting something a little more aerodynamic to dunk in your cup of coffee or glass of milk – you sometimes might just want a bite.  And, so, Carol went into the bakery to create a mini cookie with the same high-quality, all-natural ingredients she’s always used with the taste and homemade texture you adore.

The best part of our Mini Cookies is how widely available they are.  Whole Foods Market carries them nationwide in their “Cookies-By-The-Pound” self-service cases in the bakery.  But you need to look carefully- often these cookies aren’t labeled as Carol’s Cookies but you can tell by the flavors and our individually homemade cookie look.  You can also find our mini cookies across the nation at a variety of upscale grocers as well, including:
