That’s right—Carol is finally unveiling some of her treasured cookie recipes! While the recipe for her iconic half-pound cookies remains a well-guarded secret (sorry, you’ll have to keep dreaming!), she’s opening up her kitchen to let you create some of her other beloved treats at home.

So, while Carol’s original cookie recipes are safe and out of reach, she still wanted to share one of her original recipes from growing up.  Pecan Shortbread Cookies.  She still makes these for friends and family today, to rave reviews of course.  Check out the recipe below.  Enjoy!

Carol’s Pecan Shortbread Cookie recipe

Ingredients:

– ¾ cup plus 2 Tablespoons of salted butter

– ½ cup of white granulated sugar

– 1 teaspoon of vanilla extract

– ½ teaspoon of salt

– 1 ¾ cup of unbleached H&R flour plus 3 tablespoons

– 1 cup of chopped pecans

– 1 cup of semi-sweet chocolate chips

– 4 ounces of powdered sugar (after bake)

Baking Instructions:

1) Preheat your convection oven to 350 degrees.

2) Soften butter so it’s easier to work with.

3) Blend butter with white granulated sugar, vanilla, and salt until smooth.

4) Add flour and slowly mix into the butter blend.

5) Continue to mix until it turns into a dough.

6) Add pecans and chocolate chips.

7) Fold the dough over into itself so the pecans and chocolate chips are well distributed in

the mixture.

8) Cover dough and refrigerate for 30 minutes to an hour.

9) Form your cookies into round balls, approximately 1.5-oz each.

10) Place them on a baking sheet approximately 1” apart from one another.

11) Slightly press down the balls into the tray.

12) Bake on 350 F for 12-15 minutes, until the bottom edges are turning golden brown.

13) Once cooled, dust cookies with powdered sugar.

14) Eat and enjoy!
